My grandmother's al pastor has been in the family for three generations. When I couldn't find it done right anywhere in Central Florida, I figured I'd have to make it myself. Six years later the line hasn't gotten any shorter.
Everything on the menu is made the night before — the meats marinated, the salsas blended, the tortillas pressed that morning. Nothing comes frozen. Nothing gets skipped.
